Raiden series are one of the best in that kind of shooter.

Doesn't do anything particularly mindblowing, but pretty much every aspect is solid. Good music - compositionally anyway; I kind of hate the soundfont - visually interesting and varied backgrounds, enemies with decently legible behaviors and attack patterns, solid bosses, etc. Plus this might be the most projectiles on-screen of any other shmup by the point of release, though I can't be too certain. Not quite danmaku level, but certainly more frantic than most from around the time.
