Really interesting how this one feels like a genuine transition between DS1 and Bloodborne in terms of game design and even art direction. What I mean is you can clearly see they probably were already planning ahead/playing around with/thinking about the things to come as they were working on this. In the same way how Undead Asylum/Burg still have DeS-esque touch all over them. Hard to put into words, but hopefully someone understands.
I think the DLC even had alpha buildings for Bloodborne in it's code. So, you're literally correct, they were shifting their creative mindset by this point.
not just that, but the themes of losing your grip on yourself and becoming a feral beast are all over this DLC; you could very easily retool the story of this into a chapter of Bloodborne

I was skeptical about the artorias fight, I thought that surely it couldnt be as good as people say it is but they were not lying, without a doubt the best boss in the game
Wow, this DLC sure does look like fun! I'm so glad the game started NG+ immediately after I finished my playthrough, even though I had no idea I finished it, so that I could never access this DLC, apparently one of the best things in the whole series, which I obviously missed given its ridiculous start and my willingness to play without looking things up on the internet. How to punish the player for exploring on their own 101.
In the end I've decided to replay DS1, since besides the DLC I also wanted to do the few optional areas/bosses I missed before. I had lots of fun overall. The level design was a bit of a mixed bag (the first half is basically a reskin of one of the least interesting areas in the base game), but the bosses were all at least very good, especially Artorias (clearly the template for Fume Knight later on). Btw, I've actually beaten Manus on my first ever try lol.

I think they have a rather significant overlap in moves, and of course they have similar appearances: silhouettes and weapons (especially with Fume's second phase). You're right that Artorias appears more agile due to all these goofy somersaults (there's a knight in full armor), but mechanically I found the rhythm of both fights quite similar. Still, I can imagine analogous arguments made for, e.g Sir Alonne or The Ivory King, so saying "clearly" there was a stretch on my part.
I'm very surprised you've found Fume to be more rudimentary than Artorias. I fought the latter a few days after the former and the difference in complexity was stark, but in the other direction. In contrast to Artorias, Fume has two very distinct phases, he seems to delay some of his attacks, and at least in phase one you have to pay attention to both of his arms to not get hurt.
honestly was kind of underwhelming mostly due to the crazy amount of praise this gets but I do understand that this must have been an insane expansion for the time (forgive me if im wrong im a zoomer). Still really fun and had some really awesome but tough bosses. I regret picking up the black knight halberd though because it made artorias kind of a joke, and I'm sure that I would have enjoyed his fight a lot more if I hadnt one attempted him with ease.
